Description

This recipe is made by mixing of all vegetables.

Mixed Vegetable Curry ingredients

  • 3 T vegeble oil
  • 1 sli Onion
  • 1 t Ground cumin
  • 1 t Chilli powder
  • 2 t Ground coriander
  • 1 t Turmeric
  • 250 g potatoes,diced
  • 185 g Cauliflower Flowerets
  • 125 g Green beans, sliced
  • 185 g Carrots, diced
  • 4 Tomatoes, Skinned and chopped
  • 315 ml hot vegetable stock, onion rings, to garnish

Cooking Mixed Vegetable Curry

1)Heat oil in large saucepan, add onion and fry for 5 minutes, until softened.
2)Stiri in cumin, chili powder, coriander and turmeric and cook for 2 minutes, stirring occasionally.
3)Add potatoes, cauliflower, green beans and carrots, tossing them in the spices until coated.
4)Add tomatoes and stock and cover.
5)Bring to the boil, then reduce heat and simmer for 10-12 minutes or until vegetables are just tender.
6)Serve hot garnished with onion rings.

Notes

Use any mixture of vegetable to make a total of 750g (1 ½ lb) –turnips, Swedes,courgettes (zucchini),aborigines (eggplant),parsnips and leeks are all suitable for this curry.
