Delicious Baked Vegetables ingredients
- 1 very large red onion, cut into small wedges
- 4 plum tomatoes, cut into medium wedges
- 3 medium zucchini, cut into small chunks
- 1 large red pepper, julienned/cut into thin strips
- 1 head of broccoli, cut into small pieces
- 1⁄2 large head of cauliflower, cut into small pieces
- 8 oz small mushrooms, cut in half
- 2 medium carrots, cut into thin pieces
- 10 oz Parmegiano Reggiano cheese, grated
- 2 T butter, cut into several pieces
- 2 splash Dry white wine
- Salt, black pepper, garlic powder, Italian seasoning, Mrs. Dash, to taste
Cooking Delicious Baked Vegetables
1. Preheat oven to 350F.
2. Greasei (2) 9x13 baking pans with olive oil. Mixi all vegetables together except the mushrooms in a very large metal bowl.
3. Add spices and white wine and toss well.
4. Spread vegetables in pans and put mushrooms on top. Sprinkle the Parmegiano Reggiano over vegetables.
5. Dot with butter.
6. Bakei on bottom rack of oven, stirring occasionally, for 20 - 25 minutes or until vegetables are cooked through but slightly crunchy.
7. Serve with brown or white rice.
8. Note: Leftovers can either be served with rice again, or they can be mixed into penne pasta with 3-4 Tbsp olive oil plus salt and black pepper to taste added to the pasta.
9. Serve with Parmegiano Reggiano at the table.
