Carrot pudding puff

Carrot pudding puff ingredients
- 1⁄2 c margarine; melted
- 1⁄2 c Brown sugar
- 1 t Salt
- 1 T Lemon juice
- 1 1⁄2 t vanilla
- 2 Egg yolks, beaten
- 1 1⁄2 c Sifted flour
- 2 c Cooked carrots--mashed
- Or 2 lb.can drained and
- mashed
- 1⁄2 t baking powder
- 1⁄2 t Baking soda
- 2 Egg whites, stiffly beaten
Cooking Carrot pudding puff
1. Combine all ingredients, folding the egg whites in last.
2. Pour into a 1 ½ or 2 quart greased casserole dish.
3. bake at 350°F for 1 hour.
